Does anyone know how to get the date stamp to show up on the photo?

Not on a printout, but on the digital image itself?

I know the information is in the file, but when I watch the pitcures of
the kids go by on the screen saver, I like to know what the date was

This was an easy feature on all my previous digital cameras

The correct idea is to extract the date from the file (there
are programs for that) and place the date as a text into
the image, in your choice of font, size, colour, placement,
transpaceny, ... (there are also programs for that).

You can easily patch process your photos using the power of the
command line, one of the many exif-extractors, image magick and
a litte lit glue code.

If I was you, I'd keep a copy of the unchanged image, too.
